Rasgulla

Hello everyone...
Festive season is on. Holi is here. Everyone busy with there Holi preparations.
Holi being always a special and one of my favorite festival since childhood.
Planing on making a few traditional sweets and snacks for Holi. One of the all time favorite and quick easy sweet is Rasgulla.
Rasgulla / Chenna/ Cottage Cheese Balls  dipped in light sugar syrup  are very quick and easy to make. Although it looks complex but believe me these are very easy preparation with very less ingredients. These sweet delicacy can be prepared in 30 minutes. This time prepared colorful Rasgulla and they came out perfect. These are one of my papa's favorite sweet for Holi. He always used to bring these Rasgulla during holi. No idea what colors outside people are using so better be safe make your own Rasgullas in home and  enjoy.




 
Ingredients: For 12 medium size Rasgulla
  • 4 cups of milk ( 2% or full cream)
  • Lemon  1.5 tb spoon.
  • Sugar  1 cup
  • Water  2.5 cup
  • edible colors of choice
Boil 4 cups of milk Or around 1 liter of milk.
 
 
As the milk comes to boil add lemon in the milk.
 
 
The moment you add lemon the milk will start curdling .Stir it continuously and add some ice cubes in the milk. Reason is ice will lower the temperature of milk and the chenna we are getting will be soft and not sour.
 
 
Strain the whey from the solid we get wash it with cold water and hang it in the cheese cloth for 15-20 min. Remove the excess moisture or water from the chenna.
 
Take the Chenna in a plate and start kneading it . Kneading is the main step in getting  soft and
 spongy Rasgulla. Knead it for about 10-12 minutes till you get a soft dough.
 
 
Divide the dough into equal parts and make soft round balls.
 
 
 
Take pressure cooker add 1 cup of sugar and 2.5 cup of water . ( sugar can be increased according to taste)let the mixture boils .Once it start boiling add chenna balls one by one. do not overcrowd it.
 
 
Cover the lid . Cook for 10-12 minutes on medium flame.
Let it cool completely before opening the cooker. Sudden opening may results in chewy, rubbery Rasgullas.
 
 
These gets double in size on cooking. Carefully take out Rasgullas in the bowl with some sugar syrup. Divide the Rasgullas in four different bowls and add  few drops of edible colors in each bowl.
 
 
Keep it like this for 3 -4 hours. Colorful homemade Rasgullas are ready.
 Chill it  and they are ready to eat. Happy Holi!
 
 
 One can enjoy these without colors also, simply garnish with saffron and enjoy.

Chocolate Strawberry

 
Happy Valentines Day everyone!

I am here again on the eve of the Valentines Day with my first post of 2017.



Last week we went to Costco and there my daughter saw chocolates covered strawberries and started crying for them. Even I got tempted after seeing those strawberries ... somehow I was able to pacify her with the promise to prepare at home and valentines day is the best occasion to celebrate with chocolate strawberry.



I am here with one more easy to go recipe with minimal ingredients and perfect for any occasion and ready in less then an hour.
Get ready to surprise your loved ones with this sweet treat ............



Ingredients:
  • Strawberries 10-12
  • Semi sweet Chocolate chip  (or any other chocolate) 1 cup
  • White vanilla Chocolate  chip1 cup
  • 2 tsp vegetable oil (shortening)
  • Few toothpicks
  • Sprinkles of your choice  




 Method:
  1. Gently rinse strawberries and dry on paper towels (completely dry all the strawberries).
  2. Melt chocolate chips white and dark both in a separate bowl over low heat each one with 1 tsp of oil in the microwave for about 30 seconds.
  3. You will get pouring consistency chocolate.
  4. Insert toothpicks in each strawberry.
  5. Dip lower half of each strawberry into chocolate mixture; allow excess to drip back into bowl.
  6. Place on waxed paper-lined tray.
  7. Decorate with sprinkles, nuts or any design  of your choice.                       
  8. Refrigerate about 30 minutes or until chocolate is firm, or until ready to serve. 
 
 
Here is the delicious, Choco strawberries, I cannot resist eating one with white chocolate dressing (my personal favorite). So what are you waiting for? Get your  box of strawberry and make your loved one feel the special.

KHAAJA

Hello everyone,

This year October was the month of festival and celebrations and my favorite Diwali was among them. This Diwali I prepared many sweets including Paan Coconut Laddu, Rasgulla and Khaaja



Khaaja, a traditional Indian delicacy is mostly missing from our list of sweets. Its an easy recipe but requires patience. Here all purpose flour made into layered dough then fried in oil and finally put into sugar syrup. You cannot resist yourself eating these crunchy bytes filled with sugar syrup.



Ingredients
  • All purpose Flour (Maida) 1 cup
  • Ghee 4 Tb spoon
  • Salt pinch of
  • Sugar 2 cup
  • Water 1.5 cup
  • Oil to fry
  • Rose water (Optional)
Method
  • Take maida in a bowl add 4 tb spoon ghee and mix it.
  • Rub it with both hands so that it becomes bread crumbs like consistency.
  • Add water and make a soft dough.
  • Cover the dough with moist cloth and rest for 15 min.
  • After 15 min divide the dough into equal portions.
  • Take one portion and start rolling it, roll it into a big circle.
  • Cut from the sides, to make equal from all sides, apply some ghee all over the surface, then sprinkle some maida over it .

  • Start rolling from both the sides. Roll it properly to avoid gaps.
  • Cut it into equal sizes.

  • Press little from hands and roll again the cut sizes.

  • Roll it gently otherwise proper layers will not form.
  • Put oil on heat.

  • Fry all the rolled Khajas in medium heat. Do not fry them in  high heat .In high heat inside layers will not get cooked.
  • Fry till Khajas becomes golden brown and add to sugar syrup (recipe mentioned below).



Sugar syrup
  • Take 2 cups of sugar and 1.5 cups of water for making  sugar syrup.
  • Boil it for about 10 minutes.


  • After 10 minutes when you get 1 thread consistency switch off the flame and add little rose water. Adding rose water is optional but it adds tons of taste.
  • Put all the khajas into sugar syrup and soak well for about 1-2 minutes.

  • Take out from sugar syrup and keep it in another plate. Delicious full of sweetness Khaajas are ready .

Paan Coconut Laddu - Instant Recpie

Happy Dhanteras to u all. May God showers his blessings on everyone.
Here I am sharing my Diwali sweet recipe which is a  very easy quick and instant recipe Coconut paan laddu.
 
 
Paan in hindi it is known as betel leaves. It is served as a meetha paan or saada paan at the end of the meal. Its very good for digestion and combined with gulkand (rose petal preserve) saunf (fennal) becomes a perfect mouth freshener.
 
 
In this preparation paan is combined with coconut and milkmaid and laddu is formed with gulkand filling in the center.
 
 
Ingredients
Prepares 24 medium size laddus.
Time taken 15 min.
  • 2 cup desiccated coconut
  • 3/4 cup condensed milk
  • 8-9 paan leaves (betel leaves)
  • 1/4 cup gulkand (rose petal preserve)
  • 1 tsp ghee
  • 1 tbsp chopped almonds
  • 1 tbsp chopped cashews
  • Green food color (optional)
 
Method
  • Take paan leaves and chopped them finely.
  • In a grinder add chopped paan leaves and add little condensed milk and grind it properly.
 
  • In a pan take 1 tsp ghee  add desiccated coconut roast it for 2 to 3 minutes. Do not roast more or avoid browning.
  • Add the condensed milk and paan mixture and rest of the condensed milk into the coconut & combine it well.
  • Add 2tbsp chopped betel leaves in  the mixture.
  • Cook for 2 to 3 minutes when the mixture thickens take it out in a bowl.
  • If u want add 2 -3 drops of green color to the mixture and mix it well.(optional)
  • Let the mixture cool for some time.
  • Meanwhile in a bowl take gulkand , chopped almonds and chopped cashews & mix it well this is the stuffing for the laddu.
  • Adding almonds and cashews is optional one may skip it also.
  • Grease hands with little ghee.
  • Take small portion from the coconut mixture, make a flat disc add small portion of gulkand nuts mixture in the center.
  • Roll it in the form of laddus.
  • Roll all the  laddus in desiccated coconut.
  • Store it in the refrigerator.
