KHAAJA

Hello everyone,

This year October was the month of festival and celebrations and my favorite Diwali was among them. This Diwali I prepared many sweets including Paan Coconut Laddu, Rasgulla and Khaaja



Khaaja, a traditional Indian delicacy is mostly missing from our list of sweets. Its an easy recipe but requires patience. Here all purpose flour made into layered dough then fried in oil and finally put into sugar syrup. You cannot resist yourself eating these crunchy bytes filled with sugar syrup.



Ingredients
  • All purpose Flour (Maida) 1 cup
  • Ghee 4 Tb spoon
  • Salt pinch of
  • Sugar 2 cup
  • Water 1.5 cup
  • Oil to fry
  • Rose water (Optional)
Method
  • Take maida in a bowl add 4 tb spoon ghee and mix it.
  • Rub it with both hands so that it becomes bread crumbs like consistency.
  • Add water and make a soft dough.
  • Cover the dough with moist cloth and rest for 15 min.
  • After 15 min divide the dough into equal portions.
  • Take one portion and start rolling it, roll it into a big circle.
  • Cut from the sides, to make equal from all sides, apply some ghee all over the surface, then sprinkle some maida over it .

  • Start rolling from both the sides. Roll it properly to avoid gaps.
  • Cut it into equal sizes.

  • Press little from hands and roll again the cut sizes.

  • Roll it gently otherwise proper layers will not form.
  • Put oil on heat.

  • Fry all the rolled Khajas in medium heat. Do not fry them in  high heat .In high heat inside layers will not get cooked.
  • Fry till Khajas becomes golden brown and add to sugar syrup (recipe mentioned below).



Sugar syrup
  • Take 2 cups of sugar and 1.5 cups of water for making  sugar syrup.
  • Boil it for about 10 minutes.


  • After 10 minutes when you get 1 thread consistency switch off the flame and add little rose water. Adding rose water is optional but it adds tons of taste.
  • Put all the khajas into sugar syrup and soak well for about 1-2 minutes.

  • Take out from sugar syrup and keep it in another plate. Delicious full of sweetness Khaajas are ready .
